LOCATION AND EXPOSURE OF THE VINEYARDS
At the winery, the “Vigna del mattino” vineyard, with a total surface area of about 1 hectare, facing southwest; the “Vigna del vecchio salice” vineyard, with a total surface area of about 0.5 hectare, facing southwest.
PLANTING DENSITY AND VINE TRAINING SYSTEM
Guyot, with an average planting density of
about 3,500-3,800 vines/hectare.
GRAPE BLEND AND HARVEST PERIOD
90% Croatina and 10% Uva Rara.
Traditional harvest by hand during the last ten days of September.
VINIFICATION AND BOTTLING
Pressing and destemming of the grapes and subsequent fermentation in small cement vats in order to obtain small selections from the best vineyards, devatting and maturation of the wine obtained on its own yeasts.
Bottling starts in the February/March following the harvest.
SENSORY TEST AND TECHNICAL NOTES
A still wine with an intense ruby-red colour and purplish highlights, a fruity and persistent fragrance with hints of fruits of the forest, a full, supple and slightly tannic flavour, which is well-structured. Alcohol content: 12-13% by vol – Acidity: 6.00-6.50 g/l
FOOD PAIRINGS
Excellent together with salami and cured meats, risottos and filled pasta in general, also very good with main courses of meat and medium-strong cheeses. Serving temperature: 14-16°C
