The hamlet of Poggiolo di Montù Beccaria, in the Oltrepò Pavese area in Lombardy (Italy)

LOCATION AND EXPOSURE OF THE VINEYARDS
At the winery, the “Orto del Prete” vineyard, with a total surface area of about 1 hectare, facing southeast.

PLANTING DENSITY AND VINE TRAINING SYSTEM
Guyot, with an average planting density of
about 3,500-3,800 vines/hectare.

GRAPE BLEND AND HARVEST PERIOD
90% Croatina and 10% Uva Rara.
Traditional harvest by hand during the last ten days of September.

VINIFICATION AND BOTTLING
Traditional vinification in red, pressing and destemming of the grapes and subsequent fermentation in temperature-controlled stainless steel tanks, devatting and filtration of the wine obtained, maturation in temperature-controlled vats in order to maintain the classic residual sugars.
Bottling is carried out in the February/March following the harvest.

SENSORY TEST AND TECHNICAL NOTES
A lively wine with an intense ruby-red colour, a powerful fruity fragrance with marked hints of jam (raspberry and blackcurrant) and violets, a decidedly sweet, full-bodied and slightly tannic flavour. Alcohol content: 6-6,50% by vol – Acidity: 6.00-6.50 g/l

FOOD PAIRINGS
It is traditionally drunk with dry cakes, strong cheeses and cooked salami, as well as being particularly good on its own. Serving temperature: 12-14°C
