LOCATION AND EXPOSURE OF THE VINEYARDS
At the winery, in the “Casa Cristiani” vineyard, with a total surface are of about 4 hectares, facing southeast and “Guastona” vineyard, with a total surface area of about 2 hectares, facing southeast.
PLANTING DENSITY AND VINE TRAINING SYSTEM
Guyot, with an average planting density of
about 3,500-3,800 vines/hectare.
GRAPE BLEND AND HARVEST PERIOD
100% Croatina.Traditional harvest by hand during the last ten days of September.
VINIFICATION AND BOTTLING
Traditional vinification in red, pressing and destemming of the grapes and subsequent fermentation in temperature-controlled stainless steel tanks, devatting and maturation of the wine obtained, racking is carried out at least twice before bottling in the February/March following the harvest.
SENSORY TEST AND TECHNICAL NOTES
A lively wine with a strong ruby-red colour, an intense fruity fragrance with hints of fruits of the forest on first impact and of violets and roses afterwards, a full and pleasantly supple flavour. Alcohol content: 12-12.50% by vol – Acidity: 6.00-6.50 g/l
FOOD PAIRINGS
A wine to accompany any course, especially good with Italian starters, pasta and rice dishes, white or red meat; perfect with flavoursome pasta and rice dishes, grilled or boiled red meat and strong-flavoured roasts. Serving temperature: 14-16°C
